Ingredients

1 TBSP Olive Oil
1/2 of a Large Onion, chopped
1/2 Pepper (green, ylw,red, orange)chopped
3-4 large garlic cloves, chopped
3-4 stalks of celery,chopped
1 10oz can of mushrooms, pieces and stems
1 14oz can of mini corn , chopped
900gr. of leftover roast beef, chicken or pork, small cubes
3/4 cup mixed veggies (carrots, corn , peas, broccoli, cauliflower)
6 large eggs, scrambled
1/4 soy sauce
9 cups of cooked short or long grain rice
Directions
Heat oil in large pan or wok.
Add onion, garlic, celery, peppers and cook until tender crisp.
Add canned mushrooms and mini corn and mixed veggies.
Add soy sauce and meat.
Cook until veggies are tender crisp.
You may have to add a bit of water to keep things from sticking.
Add rice and mix well. Continue cooking until all is heated through.
Add scrambled eggs to mixture.
Salt and pepper to taste.
Serving Size: 10 - 1.5 cup servings
