Introduction
This was thrown together when I was trying to use up some slightly sad looking veg. from my fridge. This was thrown together when I was trying to use up some slightly sad looking veg. from my fridge.Number of Servings: 6
Ingredients

3 chicken breasts - cut in large chunks
3 leeks - trimmed & cut in 1" pieces
1 large celery stick - thinly sliced
4 rashers lean bacon - trimmed of fat & chopped
1 can chopped tomatoes
A large wine glass of white wine.
Directions
Makes 6 servings.
Mix all ingredients in a large casserole dish using the wine to rinse out the tomato can.
Cover with a lid or a sheet of foil & place in an oven pre-heated to 180 deg. C/350 deg. F.
(The gravy on this is a bit thin. If you prefer a slightly thickened sauce, you could use a slotted spoon to remove the meat & vegetables, then use a teaspoon of cornflour slaked in a little cold water added to the sauce, brought to the boil & simmered for a minute.)
I haven't tried it but I reckon this would be successful made in a slowcooker as well.
