Ingredients

    1 pound red potatoes, boiled & diced (I left the skin on)
    2 scallions, chopped
    1/2 c. sliced almonds, toasted (MUFA)
    1/4 c. raisins
    1/2 c. fat free plain yogurt
    2 tbsp mango chuney (I used Patak's hot mango chutney)
    2 tsp curry powder

Directions

Place the potatoes in a large bowl, and stir in scallions, almonds, and raisins.

In a small bowl, whisk together the yogurt, chutney, and curry powder. Pour over the potato mixture and toss to combine well.

Serving Size: Makes 4 Servings
