1.5 cups flax seed; whole
1 cup instant oats
1.5 cups whole wheat pastry flour
1 cup whey low brown (or light brown sugar)
1 cup whey low D (or sugar sub of your choice)
2 tbsp. baking powder
2 tbsp. cinnamon
.5 cup eggbeaters
.33 cup coconut oil
1 cups applesauce
1 tbsp. pure vanilla extract
1 cup yogurt
2 tbsp. molasses, blackstrap
1 cup raisins
Directions
Preheat oven to 350; spray non-stick muffin tins with pam for baking
Crush flax seeds to flour like consistency in a coffee mill; add remaining dry ingredients and mix until well blended.
Except for the raisins, Blend the remaining ingredients well, add to dry ingredients and mix until blended, stir in raisins.
Makes 12 muffins (each muffin contains 1.5 tbsp. flax seed)
