Ingredients

4 Cups Water
Pinch of salt
1 cup Stone Ground Grits, dry
1 TBSP Butter
Cheddar or Colby Cheese, Low Fat, 2 cup, shredded
Pepper to taste
1 lb Shrimp, peeled and deveined
8 slices of Maple Leaf Brand Chicken Bacon, chopped into small pieces.
Juice of 1 lime
2 cloves of garlic
Directions
Bring water to a boil. Add salt. Add grits and cook until water is absorbed, about 30 minutes until smooth. Remove from heat and stir in butter, cheese and pepper until the cheese is melted. Set aside.
Fry the "bacon" in a large skillet until it's browned - it won't brown like regular bacon. In the tiny amount of grease that's left, add shrimp. Cook until shrimp turn pink. Add lime juice, chopped "bacon", and garlic, and cook for another 5 minutes or so.
To serve, spoon 1/4 of the grits on a deep plate or bowl, and spoon 1/4 of the shrimp mixture over top. Sprinkle with parsley if you really want to make it a fancy 'do.
