Introduction
Adapted from a recipe on the Food Network for Vegans (no butter). Great way to use up extra lettuce, spinach, or other salad greens. The Garbanzo beans give it the buttery flavor. Ingredients

Chickpeas (garbanzo beans), 2 cup (one can)
Water, tap, 3 cup (8 fl oz)
*Mixed Salad greens or lettuce only, 6 cup more or less depending on what you have on hand
Onions, raw, .5 cup,
Garlic, 3 cloves
*Coriander seed, .75 tbsp
Pepper, black, .25 tbsp
*MORTON Sea Salt, Fine Salt, 0.75 tsp
*365 Organic Unrefined Virgin Coconut Oil, 1 tbsp
*Extra Virgin Olive Oil, .13 tbsp
Directions
Prepare the bottom of a pan with olive oil/Coconut butter - add onions (I used wild onions from my yard and a vidalia chopped), garlic chopped and saute until clear - add the seasonings and the Chickpeas to coat and heat. Once the onionsm, beans and garlic are cooked to your taste, add the water and the lettuce and cook for 10 minutes. Puree in batches to make a creamy soup if desired - Cauliflower or potatoes could be added for a heartier or creamier texture.

I made this recipe around Jan 8, 2016. A couple things should be changed.
1. WAY too much lettuce in comparison to other ingredients.
2. Use vegetable stock instead of water. The recipe as is has very little flavor and is bland.
3. Definitely add potatoes/cauliflower, or some other veggies. - 1/12/16

Interesting that this was bland - with 3 large cloves of Garlic, the Onions and 3/4 tsp of Coriander there should have been a fair amount of flavor? Vegetable stock is a good idea. Note we mention bagged lettuce up to 6 cups give or take. The Chickpeas give it a buttery flavor in our experience.
