    egg white, fresh, 3 large
    Granulated Sugar, 3/4
    Cinnamon, ground, 1 tsp
    Ginger, ground, 1 tsp
    *imitation vanilla flavoring, 2 tsp


Preheat oven to 200 degrees. Butter and flour a cookies sheet or pan. Set aside preferably not on the stove. Mix sugar, cinnamon and ginger together. Set aside. Separate egg whites from yolk into a glass mixing bowl. Add vanilla. Mix on high until foamy. While mixing add suguar mixture one tablespoon at a time. After adding all the sugar mixture continue mixing on high speed until stiff peaks remain standing when you pull the mixer our. (Make sure you turn it off before testing.) The next step is a little messy. Drop by teaspoonfuls onto the baking sheet. You may need more than one. You will have to use you finger to get it off the spoon. Cook for 2 hours and let cool completely before storing in an airtight container.
