    6 c. prepared rice noodles (soaked in water, then briefly boiled)
    1 c. packed cilantro leaves
    1 jalapeno pepper
    1-2 garlic cloves, minced
    1/2 t salt
    1/2 t pepper
    1/4 c toasted, sliced almonds
    1/4 c sour cream
    2 T. lime juice
    3 c. peeled, seeded cucumber
    1/4 c. chopped dry-roasted peanuts


Prepare rice noodles. Load the cilantro leaves through almonds into a food processor until finely ground. Add sour cream and lime juice and continue processing till smooth. Combine the noodles, the pesto and the cucumber and toss. Serve cold topped with chopped peanuts.
