Introduction

This is the sushi I make the most. My family loves it. I also add plain coleslaw mix or broccoli slaw mix. I just add a little to each roll so I didn't include it in the ingredients. i also like to add a bit of wasabi to this- also not added to the nutritional count. The ingredients below are for one roll (one sheet of nori) but I usually make more at a sitting. This is the sushi I make the most. My family loves it. Ingredients

    6 cups of sushi rice steamed(3 cups steamed white rice, 3 cups of water and 5 TBSP of seasoned vinegar).
    1 package of sushi nori
    1 large cucumber cut into 4" strips (seeded)
    1 package of imitation crab meat- leg style (I use Trans Ocean)


Directions

Makes about 8 rolls. Each roll can be cut into 6-8 pieces. (1 roll = 1 serving)

1. lay out one sheet of nori on a bamboo mat
2. put .5 cup of steamed sushi rice on nori
3. take two cucmber strips and lay them on nori
4. take 1 imitation crab stick. split in half horizontally so you have 2 long pieces) and place next to cucumber.
5. add any other veggies you like (not added to nutritional value)
6. roll up on bamboo mat.
I like to place this in the fridge for awhile- it makes it easier to cut. Repeat process until you have made how many you want. Cut rolls into 6-8 pieces. Add wasabi to taste.

*cook time is for steaming rice

    Another suggestion is to break up the crab sticks and add a couple of tablespoons of fat free cream cheese to the whole mix. Also a teaspoon of Worchester sause and/or Mirin (rice cooking wine) adds some great flavor it it. - 3/1/10

    The recipe says that it makes 1 serving, but 1 serving = 1 sushi roll prepared as per directions. - 8/4/09
