Introduction

Lean beef, beanless chili Lean beef, beanless chili
Number of Servings: 6

Ingredients

    1 pound extra lean ground beef
    5 cloves of garlic, chopped fine
    1 C onion, chopped
    1 green pepper, chopped
    1 large jalapeno, chopped fine (remove seeds)
    1 cup corn (fresh or frozen)
    1 cup regular beer
    1-28 oz. can of petite diced tomatoes
    8T chili powder
    Salt and pepper to taste

Directions

Chop all vegetables. In dutch oven, begin to brown beef. Add garlic, onion, peppers. Cook over medium heat until starting to soften but not brown. Add salt & pepper and chili powder; cook until spices bloom, 2-3 minutes. Deglaze the pan with the beer, scraping browned bits off bottom of pan. Add tomotoes and corn. Simmer 30 minutes. Taste and adjust seasonings.
