Ingredients

    4C Okara
    4C rolled (not instant) oats
    8 Oz FF Greek Yogurt
    8 Oz natural, smooth peanut butter
    3/4 C Brown Sugar, packed
    200G unsweetened banana chips, broken small

Directions

Mix all dry ingredients, except banana chips. Mix wet ingredients separately until the peanut butter is thinned out with the yogurt. Add to dry ingredients and mix throughly, chopping lumps into small nuggets.

Spread into a thin layer on two sheet pans. Bake at 325F for 30 minutes, stir. Return to oven, bake an additional 30 mins, stir. Return to oven, and WATCH CLOSELY, cooking only to desired brownness, about 10-15 minutes more. Granola will crisp up as it cools, so do not judge just by how crisp it seems or it will be overdone.

Remove from oven, allow to cool. If not to desired crispness when cool, you can put it back in for another 5-10 minutes, but be careful not to burn it! When cool, mix in banana chips.

Store in an an airtight container.

    Very Good
    This is good! I substituted a bit, used more oats and skipped the greek yogurt and banana chips. I would make it again, but add more sugar and bake a little longer. - 7/1/13
