Ingredients
-
1 box of Ronzoni Smart Tatse Penne Pasta
1/2 Tbsp of Olive Oil (I used Trader Joe's Garlic infused)
1 Cup of cherry tomatoes - cut in half
15 Balls of mozzarella - cut in half (Trader Joe's)
20 leaves of basil- sliced thin
1/3 cup of balsamic dressing
Salt & pepper to taste
Italian Seasoning
Directions
Cook Pasta according to directions on box. When done drain and set aside.
Meanwhile, cut cherry tomatoes in half, cut mozzarella balls in half and dice up basil.
Add pasta to a large bowl, add olive oil, when cool enough, add the tomatoes, cheese and basil. Toss. Add 1/3 cup of your favorite balsamic dressing and additional seasonings.
Serve right away or refrigerate up to 24 hours and serve.
When refrigerated the pasta will be chilled and all the flavors will blend together nicely!
I guessed on the serving size, but I have a HUGE bowl, and my guess is it could feed 15 - 1 cup servings, but I brought it down to 12 just to make sure I didn't under estimate!
