Introduction

This is an alteration to a great waffle recipe on SP, but with much less fat! Made with skim milk, they are light and fluffy on the inside.

Also great as a dessert topped with fresh sweet berries or peaches etc. and whipped cream.

Ingredients

    2 1/2 cups flour
    4 teaspoons baking powder
    3/4 teaspoon salt
    3 teaspoons sugar
    2 beaten eggs
    2 1/4 cup milk
    1/4 cup oil

    I also like to throw in a couple of tablespoons of flax meal, but account for it in the tracker separately.

    Makes 18 waffles on a square waffle iron, 1/4 cup batter for each individual waffle.

Directions

Mix dry ingredients and wet ingredients in separate bowls. Combine when waffle iron is hot. (see instructions for your iron)

Waffles are done when nice golden brown and crisp on the outside.

My iron takes about 5 minutes for a batch to cook and they are done when the heavy steaming slows down.

    Very Good
    My 12-year-old son and I dig this recipe! I like it for the low-cal option while he likes it for the waffle-y goodness! I figure if he gives the double thumbs up, it must be pretty good! - 1/16/16
