Ingredients

One 6 oz. package Farmhouse® Spanish Rice
2 Tablespoons olive oil
1/2 cup onion, chopped
1 cup red bell pepper, chopped
3 cloves garlic, minced
1/2 cup white wine
6 oz. boneless, skinless chicken breasts, sliced
6 oz. smoked sausage, sliced
1-1/2 cups water
One 14 oz. can diced tomatoes, not drained
1/2 cup frozen peas, unthawed
1 teaspoon oregano
1/8-1/4 teaspoon cayenne pepper
6 oz. raw shrimp, uncooked
1/2 cup grated Parmesan cheese
Directions
1.Melt oil in large skillet over medium heat. Add onion, red bell pepper and garlic. Cook for 5 minutes, stirring frequently, until soft.
2.Add rice and cook 3-4 minutes, stirring frequently.
3.Add white wine and cook until absorbed about 3-4 minutes.
4.Add chicken and sausage and cook for an additional 3-4 minutes, stirring frequently.
5.Add water, contents of seasoning packet, tomatoes, peas, oregano and cayenne pepper and bring just to a boil. Reduce heat to low boil, cover, and cook for 20 minutes.
6.Add shrimp and cook, covered, an additional 5 minutes. Remove from heat, uncover, and let stand for 5 minutes.
7.Top with cheese and serve.
