Introduction

Super awesome pancakes. Had to play with the recipe for a while but they are fluffy and cook evenly. Not too salty and the honey is a much better option than sugar. I would suggest blackberry honey if you can get some but clover works just as well. Super awesome pancakes. Had to play with the recipe for a while but they are fluffy and cook evenly. Number of Servings: 12

Ingredients

    1 1/2 c flour
    1/2 tsp salt
    1 tbsp baking soda
    1 tbsp honey
    1 1/2 c skim milk
    1 large egg

Directions

Combine flour salt and baking soda in a large bowl. Mix together honey milk and the egg in a small bowl then pour into the dry ingredients and mix. Use 1/4 c of mix at a time on a greased medium high skillet or a 350 degree griddle. When bubbles begin to appear toward the interior of the pancake flip and continue cooking. Allow surface to heat back up between sets.

This recipe holds up well with additives as well such as cinnamon or blueberries. It also works well as a wheat pancake, just substitute half of the flour for whole wheat flour. If you do more than this you may want to up the honey.
