Ingredients

2 tbsp flour
1/2 tsp salt
1/4 tsp pepper
1/2 lb boneless skinless chicken breast, cubbed
1 tbsp olive oil (divided)
1/2 pkg of sliced, fresh mushrooms
1/2 small onion, chopped (about 1/2 cup)
1/2 green bell pepper, cut in thin strips (about 1/2 cup)
1/2 can diced tomatoes (save the rest for another night)
1/2 can (8oz) tomato sauce
1 tsp minced, fresh garlic
1/2 tsp dried marjoram
1/4 tsp dried oregano
1/4 tsp crushed rosemary
1/4 tsp dried thyme
Directions
1. Mix salt, pepper, and flour. Cot chicken with flour mixture.
2. Heat a pan over medium high heat and spray with olive oil to coat. Cook chicken for 5 minutes, stirring until lightly browned.
3. Remove chicken from skillet.
4. Add veggies (except diced tomatoes and sauce) and cook and stir for about 5 minutes (until veggies are nice and tender).
5. Stir in diced tomatoes, tomato sauce, garlic, and all the spices. Bring to a boil while stirring frequently. Add the chicken back to the skillet.
6. Reduce heat to LOW and cover and simmer for about 5 minutes.
7. Serve over whole wheat pasta if desired.
