Ingredients

    1 cup oats soaked in 1/2 cup orange juice and 1/2 cup boiling water for 15 minutes
    1/2 cup margarine
    1/2 cup sugar
    1/2 cup brown sugar
    2 eggs beaten
    1/2 cup raisins
    1/2 cup chocolate chips
    1 cup flour (can use 1/2 whole wheat, 1/2 all purpose)
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 tsp vanilla

Directions

Cream margarine and sugar. Beat in eggs and stir in oat mixture. Stir in raisins.
Add flour, baking powder, baking soda, salt, and vanilla.
Stir until moistened. Pour into well-greased muffin cups.
Bake at 350 for 20 minutes.
