I have a big family so when we make pancakes, we make A LOT of pancakes! My family loves these pancakes because they taste so yummy. I love them because they are full of fresh, healthy ingredients. Ingredients

6 cups whole wheat flour (freshly ground is best!)
6 Tbsp sugar
2 Tbsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
3 Tbsp ground flax seed
1/3 cup water
1/4 cup applesauce
1/4 cup unsalted butter, melted
5 1/2 cups skim milk
1/2 cup lemon juice
Directions
First get your ground flax sitting in the 1/3 cup water. Set aside.
Combine milk and lemon juice. Set aside.
Combine the dry ingredients in a large bowl. In a separate bowl combine all the wet ingredients, including the flax/water mixture and milk/lemon juice. Pour wet ingredients into dry and stir until just combined, there will be lumps.
Heat a griddle to about 325 degrees, spray with cooking spray if needed. Pour 1/4 cup batter per pancake. Cook until large bubbles begin to appear, about 2 minutes. Flip pancakes and cook until golden brown on the second side, about 1 1/2 minutes. Repeat using all batter.
Serving Size: Makes about 50 pancakes
