Introduction

This truly a pantry meal. easy to put together enjoyable to eat. Please note, I serve this with sour cream(1 tbsp) and shredded reduced cheddar(1/4 cup) this is not reflected in the calories so add them in. Ingredients

    2 14.5oz cans diced tomatoes
    1 15.5oz can black beans, drained and rinsed
    1 large onion, diced
    1 cup of frozen corn kernels(no need to thaw)
    1 medium green pepper, cut into 1 in pieces
    1 clove garlic, minced
    2 tbsp chili powder
    1 tsp ground cumin
    1 tbsp EVOO

Directions

1. in a large non stick skillet, heat 1 tbsp olive oil over medium heat. saute onions until soft and translucent(approx 5 minutes)
2. add spices and garlic and cook until fragrant (approx 1 Min).
3. add in tomatoes and cook for 15 minutes mashing the big pieces of tomato.
4. add in remaining ingredients except to skillet and cook another 10 minutes.
5. serve hot with salsa, light sour cream and shredded cheddar cheese.

Serving Size: makes approx 6 generous servings
