Ingredients

    4 boneless, skinless chicken breast halves, pounded to 1/2 inch thickness.
    Olive Oil, 3 tbsp
    Garlic, 3 cloves (minced or pressed)
    Spinach, fresh, 1 package (10 oz)
    Balsamic Vinegar, 2 tbsp
    Chicken Broth,1.2 cup
    Canned Tomatoes,14 oz.
    Couscous, 3/4 cup,uncooked
    salt and pepper to taste

Directions

Cut both chicken breasts in half and pound to 1/2 inch thickness.
Bring 1-1/2 cups water to a boil in a small saucepan. Add the couscous, stir, cover, and remove from the heat. Let the couscous stand, covered, until the chicken is ready.
Heat a large skillet over medium high heat. Season the chicken with salt and pepper. Once the skillet is hot add 2 TBSP oil and the chicken. Cook until browned and just cooked through, about 4 minutes on each side. Remove the chicken to the plate. Add the remaining oil to the skillet, add the garlic, and cook for 1 minute. Add the spinach and cook until wilted, about 2 minutes. Season with salt and pepper and transfer the spinach to a bowl. Add the vinegar, broth, and tomatoes. Bring to a boil and stir, scraping up any browned bits. Simmer for 3-5 minutes until the sauce is reduced and slightly thickened. Fluff the couscous. layer four serving plates with couscous, spinach, chicken, and sauce. Serve immediately.
