Introduction

This soup (more like a stew) surprised me at how delicious and easy it was to make! Even my 3 year old devoured it. We are one satisfied family right now (portions are large). This soup (more like a stew) surprised me at how delicious and easy it was to make! Even my 3 year old devoured it. We are one satisfied family right now (portions are large).

Ingredients

    3 Large Chicken Breasts
    1 Can Green enchilada sauce
    1 can Chicken broth
    1 (4 oz) can chopped green chiles
    1 can black beans
    1 cup yellow corn
    1 pkt. taco seasoning
    1 can stewed tomatoes

Directions

Slow cook chicken breasts with can of green enchilada sauce for 3-4 hours. Shred chicken and keep juices in slow cooker. Add broth, chiles, beans, seasonings and corn. Continue to slow cook 1-3 hours (the longer the better). Add tomatoes about 20 minutes before serving. Top with tortilla chips, cheese and sour cream (not counted in the calories!)
