Introduction

Rici E Bici is traditionally made more like a risotto but I like the texture of long grain rice a lot better. Rici E Bici is traditionally made more like a risotto but I like the texture of long grain rice a lot better.
Number of Servings: 6

Ingredients

    2 cups long grain white rice
    2 tbsp light margarine
    1/2 small onion, minced
    1 tsp Better than Bouillon beef stock
    4 cups water
    1 package frozen green peas
    1 cup Italian blend finely shredded cheese

Directions

In a large saucepan melt the margarine on medium-high heat

Once margarine is mostly melted add onions and saute until onions are translucent

Add rice to saucepan and saute for 2-3 minutes stirring constantly

Add water and Better than Bouillon, bring to a boil and then cover and turn down to low

after approximately 10 minutes add the frozen peas, cook until rice is tender and water is gone

add cheese and stir until well blended and melty

serve!
