Introduction

Spianch, Bacon and Egg Spianch, Bacon and Egg
Number of Servings: 2

Ingredients

    5 Eggs
    5 Slices of Bacon
    3 Cups of Baby Spinach
    Salt and Pepper to taste

Directions

Just take about 5 slices of bacon (can sub. w. turkey bacon) and cook until done.
Remove the bacon from the pan.
Leave in a small amount of fat to cook the spinach with. Make sure the pan is hot and throw in the spianch. Cook until all wilted.
Remove the spinach. Scramble the eggs and cook until done. Once the eggs are all cooked crumble the bacon and add the spinach. Mix all together. Add salt and pepper to taste. SHould serve 2 people. The best part is that you can play with the the ingredients and amounts.

    That's a lot of bacon which I don't usually think of as a particularly "healthy" food. I would substitute Egg Beaters for the eggs and tofu for the bacon to make this better. - 11/27/07
