Introduction

An easy dredge mix for sauteed fish. Not meant to be terribly flavorful. Its mostly as a base for fish that you already have a sauce, chutney/salsa, or dressing planned for (thus, they would provide the flavor) however I imagine you could add spices like powders of garlic, onion, lemon, paprika, etc to your tastes.

Ingredients

    -1/3rd cup flour (will be less calories if you have leftover flour from the dredge)
    -0.25 tsp pepper
    -0.25 tsp salt
    -1 tbsp extra virgin olive oil
    -1 lb white fish (your choice -tilapia, bass, halibut, trout, etc)

Directions

1. Combine flour, salt, and pepper in a shallow dish. Thoroughly dredge fillets and discard leftover flour.
2. Heat oil in a large nonstick skillet over medium-high heat. Add the fish, working in batches if necessary, and cook until lightly browned and just opaque in the center, 3 to 4 minutes per side. Serve immediately.

Serving Size: 1lb fish cut into 4 portions
