Ingredients

    3 cups chopped tomato
    1cup onion
    4cups corn
    3 cups peas
    6-10 red potatoes diced
    1jalapeno
    6garlic cloves
    1 can tomato sauce

Directions

cook diced potato seperately in water first
saute onion
blend tomato garlic tomamo suce and pepper add to onion
add vegetables simmer 10 -15 then add potato and season as desired.

I made this to top tostadas. To prepare tostadas first layer mashed pinto beans on tostadas then add a layer of half cup of the veggie mix and the optional topings are shredded lettuce diced tomatoes crumbled queso fresco sour cream and your favorite hot sauce.

Or use as a filling for tamales, empanadas or enjoy with rice or as is.
