Introduction

Ingredients

    1 cup fresh broccoli, chopped
    3/4 cup fresh mushrooms, chopped
    1/2 cup scallions (green onions), chopped
    1 cup fresh ripe tomatoes, chopped
    2 cloves garlic, minced
    1/4 cup Kraft 2% Shredded Cheddar Cheese
    1/2 cup egg substitute (such as Eggbeaters)
    6 Tblsps liquid egg whites
    2 tsps olive oil
    2 tsps Mrs. Dash Extra Spicy Seasoning- no salt added
    pepper to taste

Directions

Preheat oven to 350F.
Wash and prepare all veggies.
Saute veggies including mushrooms in the olive oil until tender or your preferred texture (I use a nonstick pan)
Mix the egg substitute, egg whites, and pepper and Mrs Dash together.
Spray an 8 inch pie plate with cooking spray. Spread veggie mixture in the plate.
Sprinkle the cheese over the veggies.
Pour the egg mixture over the veggies.

Place dish in the oven and bake 15-20 minutes until egg mixture is set and lightly golden on top.

Cut in half. Serves 2 people or makes 2 meals for 1 person.
It can be reheated in microwave for about 1 1/2 minutes.

    Incredible!
    this is yummy! I made it last night and brought to work this morning. I didnt have any egg beaters or egg subsitute, so I used 2 eggs and used a arnold sandwich thin and used 1/2 of the serving size for a sandwich! delish - 1/13/12
