Introduction

This is a delicious and filling soup with a resturant-quality flavor, able to stand on it's own as a main entree. I choose to use butter for this recipe because it is a natural ingredient. Ingredients

    4 cups onions, thinly sliced
    2 T. garlic, pressed or minced
    2 tablespoons all-purpose flour
    2 (10.5 ounce) cans beef broth, or water and beef boullion
    ¼ c. butter
    ¼ c. white wine or vermouth, optional but adds distinct flavor. Has been added for nutritional value.
    2 T. Worcestershire sauce
    1 T. parsley
    ½ t. salt
    1 tsp. black pepper or more to taste
    2 1/2 cups water
    Caesar (or garlic) croutons, generous handful per serving
    8 Fresh mozzarella slices, generously topped per bowl

Directions

Separate sliced onion into single rings. In a medium sauce pan saute onions and garlic in butter until soft, approximately 20 minutes. Stir in flour and gradually add broth and water and rest of ingredients. Bring to a boil and simmer for 20 minutes. Place Croutons into soup bowls. Pour soup mixture over croutons, and top with sliced mozzarella. Broil in heat safe bowls until mozzarella is bubbly and lightly browned. Makes 8 servings.
