Ingredients

    • 2 tbls butter
    • 2 tbls plain flour
    • 1 chopped onion
    • 1 Red Capsicum
    • 2 cups milk
    • 1 lge tbls curry powder
    • 1 lge tbls mayonnaise
    • 1 tbls australian mustard
    • 1 tbls sugar
    • salt and pepper to taste
    • 500 gms scallops.

Directions

1. Melt butter in saucepan, add onion, red capsicum and saute.
2. Take off heat and mix in curry powder, mayonnaise, mustard, and sugar.
3. Mix in flour and milk.
4. Place back on heat, with scallops included and mix till mixture becomes thick and creamy. Continue stirring for 1 min after boiling on med heat, take off heat, add salt and pepper to taste.
5. This serves 3 large or four med size serves. Depends on individual preference. This recipe is my own i made up and use a lot with no complaints.
6. Can be served with mashed potato, rice, or pasta for dinner, or served on hot toast for brunch.

    Incredible!
    LOVE IT! Great with scallops but is just as awesome with prawns or a firm white fish, such as pink ling or gummy shark. I added some fresh coriander. Big thumbs up here .. Everyone loves it :) Served with basmati rice flavoured with coconut. - 12/30/16
