Ingredients

* *Whole grain quinoa 1/3 cup (remove)
Water 2/3 cup
Olive oil 1 Tablespoon
* Asparagus, fresh, 1/2 cup (remove)
* *shallot, 3 tbsp (remove)
* *Organic Sprouted Tofu, 1.5 oz (remove)
* *Zucchini fresh 1/2cup(remove)
* Spinach, fresh, 1/3 cup (remove)
(optional) hot pepper 1 teaspoon
Directions
1. Boil 2/3 cups of water. Place quinoa in boiling water and cook on medium heat for about 15 minutes or until all the water is absorbed.
2. As the quinoa is cooking, heat a frying pan with olive oil on medium-low heat. saute' shallots and optional peppers for 5 minutes.
3. Add the tofu, zucchini, and asparagus.
4.cook for another 5 minutes.
5. Place fresh spinach in a bowl and add the tofu scramble. Then place the cooked quinoa on top of that, and stir.
6. Add any salt, pepper or herbs desired and enjoy.
