Introduction

Ingredients

4 ripe tomatoes
4 large portobello mushrooms
4 cloves of garlic
1 Lemon
1 leek
1 medium onion
5 fresh basil leaves
4 T Parmigiano reggiano cheese
1 T parsley
2 T olive oil
Salt to taste
Directions
Preheat oven to 400 degrees
Chop tomatoes, garlic, onion, leek and put aside
Place onion in skillet and saute until slightly brown
Add remaining chop ingredients and saute until soft
Salt to taste
Squeeze 1T of lemon over saute'd ingredients
Add 4 leaves of basil

Spray olive oil on baking sheet and place mushrooms "bottom side up".
Add mixed ingredients into caps and top with cheese.
Bake for 12 minutes
Sprinkle 1 leaf of parsley over mushrooms
