Ingredients

    whole wheat flour 3 1/2 cup
    sugar 2/3 cup
    baking powder 4 teaspoons
    salt 1/2 teaspoon
    eggs 2 beaten
    soy milk 1.5 cup
    cooking oil 1/2 cup
    fresh blueberries 1 cup
    quaker oatmeal 1.5 cup

Directions

Preheat the oven to 400 derees. Line mufin cups with paper bake cups and set aside.

In a medium bol combine flour, sugar, baking powder, salt, and oats. Make a well in the middle and set aside

In another bowl combine eggs, milk, oil. Add egg mxture allat once to the four mixture. Stir until moist and lumpy.

Stir in blueberries.

spoon batter into muffin cups. Bake at 400 degrees for 18-25 mins or until toothpick inserted comes out clean. Cool on wire rack.
