Ingredients

    Red Ripe Tomatoes - 1 medium whole (2-3/5" dia)
    Pizza Crust Dough - 8 serving bag
    Roughly ripped Basil - 1 tbsp
    Freshly cracked Black Pepper - 1 tsp
    Kosher Salt - .5 tsp
    Olive Oil, Extra Virgin, 1.5 tbs
    Colby Cheese (or your favorite blend) - 2 oz

Directions

- bring dough to room temp and cut into 4 equal pieces
- roll each out into 4 inch rounds
- fill with 2 slices tomatoes, 1/4 of cheese, salt and pepper to tasted and torn basil.
- fold over to form a crescent shaped pocket and roll edges together to seal.
- Brush on about 1/4 tsp of oil on each
- Bake in pre-heated 400F oven for 20-25mins.
- remove and let rest for at least ten minutes
