    Seeds of Change Jalfrezi Sauce - 1.32 cups (4 serving jar)
    Chicken Breast, no skin - 24 ounces (remove)
    White Rice, long grain - 6 cups cooked/3 cups uncooked
    Kosher Salt -1 tsp
    Mixed Vegetables - 1 package (10 oz) (whatever is your fav)
    Olive Oil, Extra Virgin - 1 tbs


- There are tons of really good Indian simmering sauces available on the market. I usually prefer Patak's but I thought I'd give the Seeds of Change Jalfrezi a try.
- To cook chicken, follow cooking instructions on your Jalfreri sauce jar of your choice.
- To cook the rice, follow package instructions. Add mixed veg to rice at the beginning of cooking and then serve with the Jalfrezi chicken.
- Tips from me 1) I find that rice package instructions often has too much water. Add to that the water in the frozen vegetables and you end with mushy rice. I usually wash rice until water runs relatively clear (helps cuts down on gummy-ness). The add water over rice (approximately 1.5 cups of water to 1 cup rice... also to check the water/rice ratio is good. Place covered in water on a flat level surface, make sure the rice is evenly distributed in the pan and the stick my middle finger in just to the top of rice. If water comes just to the first joint, I know I'm good). Then add mixed veg and salt and bring to a boil on high. Once boil is achieved. place tight lid on the rice and reduce to low (use a flame defuser if want to be sure) and cook for 20min.
