Ingredients

1 tbsp canola oil
3 1/2 oz bittersweet chocolate, chopped
1 tbsp unsweetened applesauce
1 egg, separated
Pinch salt
2 tsp sugar
Directions
Put oven rack in middle position and preheat oven to 350°F. Lightly grease 2 individual ramekins.
Melt chocolate and butter in a metal bowl set over a saucepan of barely simmering water, stirring until smooth.
Remove bowl from heat, add applesauce.
Stir well and cool 5 minutes.
Whisk in egg yolk and a pinch of salt until combined.
Beat egg white until it holds soft peaks.
Gradually add sugar, and continue to beat until white is stiff and glossy.
Whisk about one fourth of the white into chocolate mixture.
Fold in remaining white gently but thoroughly.
Pour into ramekins. Cover each with foil and crimp tightly around rim.
Put ramekins in a water bath, making sure that foil is above water.
Bake 30 minutes. (Puddings will be gooey to the touch.)
Transfer to a rack and cool puddings, uncovered, about 1 hour.
Just before serving, un-mould puddings into serving bowls.
