Ingredients

12 oz extra firm tofu, cut into 1/2 inch cubes
1 1b lean ground beef
1 cup chopped green onion
1 cup grated carrot
2 tablespoons minced ginger root
2 cloves chopped garlic
2 tablespoons Sambal Oelek (ground chili paste)
1 tablespoon olive oil
4 tablespoons ketchup
4 tablespoons lite soy sauce
4 tablespoons cooking wine
2 cups water
2 tablespoons cornstarch dissolved in 1/4 cup cold water
1 cup green peas
Directions
1. Rinse and drain tofu. Cut into 1/2 inch cubes. Dip into hot water for 30 seconds. Drain well and gently.
2. Heat olive oil in wok or skillet. And green onion, grated carrot, ginger root, and garlic. Stir fry over medium high heat.
3. Add lean ground beef. Cook over medium heat until no pink left in beef. Drain off grease if necessary.
4. Add Sambal Oelek, ketchup, soy sauce, cooking wine, and 2 cups of water. Bring to a boil and add cornstarch mixture. Stir well. Reduce heat and simmer mixture until thick.
5. Add tofu and cooked peas. Stir well and cook until tofu and peas are heated through.
Serve over rice if desired.
