Introduction

Taken from Bon Appetit's cookbook Fresh Fast Food. Serve with LF sour Cream, cheddar cheese or jalepeņo studded cornbread, if desired. NOT IN CALORIE COUNT. Ingredients

    1 tbsp olive oil
    1 large onion, chopped
    2 med. Red Bell peppers, chopped
    6 cloves of garlic, minced
    1 lb ground lean turkey
    1 tbsp Ancho Chili powder
    2 tbsp chili powder
    1 1/2 tsp each ground cumin and Mexican oregano(dried)
    2-15oz can Black Beans, rinsed and drained
    1-28 oz can crushed tomatoes
    3 cups Low Sodium chicken broth

Directions

1. In a heavy soup pot over medium heat add 1 tbsp olive oil, onions and peppers. Cook until soft, approx. 5-8 minutes. Add garlic and cook until fragrant Approx 1 min.
2. add in turkey and cook 5-10 minutes until no longer pink. Break up big chunks with a wooden spoon.
3. Add in spices
4. add in remainder of ingredients(beans through chicken broth. Bring to a boil then reduce heat to low and cook uncovered form 1 hour or until chili is thickened.
5. serve with favorite chili toppings or cornbread with chopped jalepeņos.
