Ingredients

    3 eggs
    1 cup of oil (applesauce or greek yogurt can substitute)
    1 tsp vanilla
    2 1/2 cups sugar
    3 cups flour
    2 tsp cinnamon
    1 tsp salt
    1 tsp baking soda
    1 1/2 tsp baking powder
    Topping:
    1 cup chopped nuts
    2 tsp sugar
    2 tsp cinnamon

Directions

Add eggs, oil, zucchini, and vanilla to blender. Blend until completely smooth. Pour into a large bowl. Add sugar, flour, cinnamon, salt, baking soda, and baking powder. Stir until combined. Put into 2 loaf pans that are greased and floured. Sprinkle with sugar, nuts, and cinnamon as topping. Bake 1 hour at 350 or until a toothpick inserted comes out clean.

Serving Size: Makes 2 loaves of 16 pieces
