Ingredients

    * Marlin, 1 lb
    * 1/2 red Onion, chopped
    * 3 cloves garlic, minced
    * Cilantro, raw, 3 tbsp (to taste)
    * Hot Pepper, 0.25 cup, chopped or diced
    * Limes, juice from 8
    * 1/2 Red Ripe Tomatoes, diced
    * 1 Sweet Red Pepper, chopped
    * Ginger Ale, 2 fl oz (remove)

    You can use other white fish if marlin is not available, although it is a great consistency for ceviche. Another popular fish is corvina.

Directions

1. Mince/Chop the onion, garlic, tomato, cilantro, hot pepper, red pepper, and tomato (omit seeds and juice from tomato) and put in NON plastic bowl. MIX WELL

2. Juice the limes

3. Cut the fish into 1/2 inch pieces.

4. Mix the fish in with the rest of the ingredients

5. Cover with lime juice and ginger ale.

6. Mix well so all the fish is covered with liquid.

7. Refrigerate for a few hours, mixing the ceviche every 30 - 45 minutes.

8. I add hot sauce when ready to eat (but that is my personal preference)

Serve with crackers, tortilla chips, plantain chips etc.
