Ingredients

    Couscous, 1 cup, cooked
    Broccoli, cooked, 2 stalk, large (11"-12" long)
    Quorn, tenders, 2 serving
    Avocados, California (Haas), 1 fruit without skin and seeds
    Hearts of Palm, 1 cup
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    Artichokes, fresh, 2 artichoke, medium
    Parmesan Cheese, grated, .5 cup
    Garlic, 1 tsp

Directions

Chop broccoli, cherry tomatos, artichoke hearts, hearts of palm, and avocado.
Put chopped broccoli and quorn on cookie sheet and toss with garlic, salt, pepper, and olive oil then bake for 20-25 @ 350. When done cooking add lemon juice and Parmesan cheese.
Make Couscous.
To serve:
Put desired amount of couscous on plate, add broccoli/quorn, add cold ingredients.
Voila.
