Introduction

Ingredients

    3 large - Chicken Breast, (approx. 1 lb.) cooked, no skin, cubed or pulled
    1 - Onions, raw, medium
    1/2 C. Chopped Green Peppers (bell peppers)
    1 Tbsp. Garlic
    2 Tbsp. Oregano, ground
    1 Tsp. Ground Cumin
    2 Tbsp. Chili Powder
    1 - 14.5 oz cans of Swanson Chicken Broth 100% fat free
    2 - 15.5 oz cans of Cannellini Beans
    1 Tbsp. Cornstarch
    6-8 oz of Wine, white

Directions

Cut chicken up into chunks. In large pan, saute onions, peppers, garlic until golden about 5 min. Mix cornstarch into cold chicken stock. Once well mixed add to pan. Then add all other ingredients: wine, chopped chicken, spices and beans. Bring to a boil, reduce heat and simmer about 20-30 min.
Serve in bowls, add a spoonful of sour cream and cheese (optional)

Serving Size: Makes about 8-10 1 cup servings.
