Ingredients

    1 pound penne pasta or pasta shape of choice
    1/4 cup pine nuts
    3 tablespoons olive oil
    5 cloves garlic, chopped
    1 14-ounce can artichoke hearts or 1 9 ounce bag frozen artichoke hearts
    1 large can or 1 family size foil pouch white albacore tuna
    1 anchovy (optional)
    2 tablespoons capers, drained
    1 tablespoon lemon pepper marinade or 2 teaspoons lemon pepper seasoning
    1 ounce parmesan cheese, grated, for garnish

Directions

Prepare pasta according to package directions.

While pasta cooks, toast pine nuts in a dry skillet over medium heat. Remove pine nuts from pan.

Add olive oil to hot pan and add garlic to saute. Add artichoke hearts (quarter if needed) and stir to coat. Add tuna, anchovy, capers and lemon pepper and stir to combine.

Add cooked pasta to sauce and stir to coat. Add reserved pine nuts. Serve pasta with parmesan cheese to taste.

Makes 8 1.5 cup servings.
