Ingredients
-
1 medium eggplant (peeled and sliced into strips)
1lb ground chicken
3 Roma tomatoes (sliced thin)
1 medium onion (chopped)
3 cloves garlic (minced)
4TBS tomato paste
1/4 cup water
1/2 cup red wine
3 packages of single serving string cheese (peeled or sliced)
1/4 cup parmesan cheese
oregano (to taste)
Directions
-pre heat oven to 400 degrees
-"sweat" the eggplant for approx 20 min
-mix together water, tomatoe paste & red wine
-saute the eggplant using a 1 second spray of Pam or water until just brown
-add browned eggplant to a baking dish
-at the same time brown ground chicken, chopped onion and minced garlic together (until no longer pink)
-once chicken/garlic/onion is cooked through add water/wine/tomato paste mixture to chicken/garlic/onion
-cover and simmer chicken mixture with tomato paste mixture for approx 10-15min
-when done pour chicken/tomato paste on top of the eggplant in the baking dish
-layer tomato slices on top of meat mixture
-layer mozzarella peels/slices on top of tomatoes
-sprinkle mixture with parmesan
-sprinkle with oregano
