Ingredients

    Heavy Whipping Cream, 1 cup, fluid (yields 2 cups whipped)
    Cream Cheese, 12 oz (remove)
    Jello Sugar Free Lemon Gelatin - small package
    Splenda, 1.333 cups
    Ice Water, 1 cup (8 fl oz)
    Boiling Water, .333 cup
    Key Lime Juice, 1.25 cups
    Sugar free Coconut Syrup, 3 tbsp
    Graham Crackers, 1 cracker (2-1/2" square)
    Reddi Whip, 18 tbsp

Directions

Whip cream until peaks, then set aside. Mix gelatin with boiling water until dissolved. Add ice water and refrigerate until partially set. Mix softened cream cheese with key lime juice, Splenda and coconut syrup until well-blended. Add thickened gelatin, blend well, then gently fold in whipped cream. Chill until set. Top with whipped cream and sprinkle crumbled graham cracker over top. Enjoy!
