Ingredients

    4 cups cooked lentils
    1 cup each chopped celery, onion,carrot and zuchinni
    1/4 cup chopped parsley
    2 tablespoon each fresh oregano, &rosemary
    1 teaspoon dried basil
    1 tablespoon olive oil
    8 cups canned tomatoes in juice
    1 vegetable stock cube
    1/2 teaspoon coarse ground black peeper
    1 small chill chopped finely
    5 cloves garlic chopped finely
    1 packet dried wholemeal spaghetti

Directions

In olive oil cook onion until soft add garlic, chilli and herbs except parsley, add vegetables and cook 5 minutes, add cooked lentils, stock cube and tomatoes, cook for 30 minutes until vegetables are cooked, add chopped parsley
meanwhile bring a large pot of water to the boil and cook spaghetti
If you do not want to use oil, add all ingredients to the pot except parsley and cook 40 minutes.
