Ingredients

1 onion, chopped
1tbsp butter
3/4-1 lb crabmeat
8 ozs colby cheese
1 cup milk
.5 cup sour cream
half a stick of butter, .25 cup
1.5 tsp parsley
.5 tsp garlic salt
6-8 10" flour tortillas
Directions
makes 4-6
1. In medium sized saucepan, saute' onions in 1 tbsp butter. remove from heat an stir in crabmeat and 1 cup of cheese.
2. Place desired amount of mixture into each tortilla. Roll up tortilla and place seam-side down in a greased 9x13 baking pan.
3. Combine milk, sour cream, the half-stick of butter, parsley, and garlic salt in the saucepan. Heat until blended and warmed through.
4. Pour sauce over enchiladas and sprinkle with remaining cheese.
5. Bake uncovered at 350 for 30 minutes.

yummy but instead of the milk i use condensed lowfat milk and left the butter out but use a few sparys of " I' cant believe it's not butter", and use fat free cheese which dramatically lowered the calorie intake. I also used lo carb tortillas which were only 50 cal each. I also added garlic to crab. - 3/15/11
