Introduction

I started making this when I was living in the dorms. It's easy, quick, cheap, and fills you up fast. I started making this when I was living in the dorms. It's easy, quick, cheap, and fills you up fast.
Number of Servings: 6

Ingredients

    2 cans tomatoes (no salt added)
    1 can beans (I use kidney beans or black beans)
    1 12-oz. bag frozen green veggie (I use brussel sprouts... very underrated!)
    1/2 cup leafy green veggie (I use either spinach or collard greens)
    1/2 bag frozen tater tots
    1 slice cheese per serving

Directions

1) Put tomatoes, beans, and veggies into a large stockpot. Simmer until fully cooked.
2) Spice this mixture with whatever spices you like... Mexican and Italian flavors work really well.
3) Bake tater tots according to package instructions.
4) Spoon stew over the tater tots and top with a slice of cheese!

This freezes great and makes for easy work lunches.
