Ingredients

1 pie crust recipe
2 tbs olive oil
3 slices turkey ham
4 medium sized onions, green
1 cup brie cheese
4 eggs
1 1/2 cups heavy cream
1/4 tsp nutmeg, ground
Optional:
1 cup parmesan cheese, grated
Directions
- Preheat the oven to 400F. Cover pie crust with foil and bake for 10mins. Remove foil and bake for another 5mins. Remove pie crust and reduce heat to 325F.
- Julienne the turkey ham and set aside. Slice the onions into rings and sauté with the olive oil and ham until tender.
- Spread the ham mixture on the bottom of the pie shell. Spread the brie cheese over the ham mixture. (Optional: Sprinkle the parmesan cheese over the brie)
- Combine eggs, cream, and nutmeg and pour into the pie crust.
- Bake for 30 minutes or until set. Let it cool slightly before serving.
- Enjoy!
* Note
- I substituted the original 4 tbs butter with olive oil.
- I also reduced the cream from 2 cups to 1 ½ cups. You wouldn't believe the difference that made in the calorie intake! And the results are still just as good as any other quiche recipe.
