    1 cup plus 2 T flour
    1 1/2- 2 T Splenda (use whatever sweetener you want)
    1/4 t salt
    1 1/8 t yeast (or half a packet)
    1/2 cup warm water
    1 egg white, beaten
    1 T unsweetened applesauce


Mix 1/2 cup plus 2 T flour, sweetener, salt, and yeast in a bowl. Mix water, egg white, and applesauce in another. Mix the wet and dry until smooth, then add the other 1/2 cup of flour and mix until combined. Cover and let rise about a half hour. Stir about 25 times, then divide into six muffin cups (I use silicone, you might need to spray them if you use something else). Dough will be sticky. Let rise uncovered another half hour or so. Bake at 400 degrees for 10-15 minutes.
