Introduction

This recipe was a favorite when I was growing up. I tend to make it when I'm feeling like home cooking. This recipe was a favorite when I was growing up. I tend to make it when I'm feeling like home cooking.
Number of Servings: 8

Ingredients

    * 10 oz. package frozen spinach � defrost and squeeze out water.
    * 1 large onion
    * olive oil
    * .5 cup egg beaters (2 eggs)
    * 8 oz. mozzarella (I use part skim)
    * 15 oz. ricotta (ditto)
    * salt, pepper to taste (sometimes I add a little cinnamon)
    * frozen pie shell

Directions

Preheat oven to 400 degrees. Let pie shell defrost on counter.
Chop onion and saut� until translucent, not brown.
Chop up mozzarella.
Mix mozzarella, ricotta, eggs. Add spinach, saut�ed onions, salt and pepper. Mix well.
Turn into pie shell.
Place in oven for about 1 hour until top is raised and browned.
Cut and eat.
