Ingredients

    1 Summer Squash
    1 Zucchini
    3 small tomatoes
    1 can plain tomato sauce
    2 links Al Fresco Italian style chicken sausage
    1 T Olive Oil
    1 cup white rice, uncooked (yields about two cups cooked)
    italian seasoning
    salt and pepper

Directions

Cook rice as instructed. Slice sausage and saute in olive oil. Add squash and zucchini, sliced, and cook until brown. Add tomatoes, diced, and tomato sauce and simmer 10-15 minutes. Serve over rice.
